Kelp noodles have quietly existed all along, yet somehow they never became one of the foods most of us build our lives around. They arrive from the ocean almost transparent, carrying little more than water, minerals, and an elegance that seems impossible for something sold in a plastic package. Looking this closely, it’s hard not to wonder how many remarkable foods are waiting just outside our habits, not because they’re rare, but because we’ve simply stopped noticing them. Sometimes curiosity begins with asking why something so simple never became ordinary.
