Grown in the Dark
Rhubarb grown without light does not stop growing; it becomes softer, sweeter, and vividly pink.
Field Notes
In a process called forcing, rhubarb is placed in warm darkness and grows from the energy it has already stored inside itself. The absence of light does not prevent growth. It changes the kind of growth that becomes possible.
